Saffron City is home to Sabrina, the Psychic-type Gym Leader of the Saffron City Gym and a former Gym is located here, it being the Fighting Dojo, which is led by Kiyo.
Basics
Saffron City is a sprawling metropolis in the Kanto region. It lies between Celadon City, Vermilion City, Lavender Town, and Cerulean City.
Saffron City is also home to the Magnet Train Station, where the Magnet Train runs between Saffron City and Goldenrod City.
Not only is Saffron City one of the biggest and busiest cities in Kanto, it is even famous outside Kanto. The large Silph Co. HQ stands form as the cities center piece, while two Gyms dominate the cities north-eastern corner district. Not only it is the business center of Kanto, it also holds the region's largest infrastructure (including the Magnet Train).
In the games
Saffron City is present in the Pokémon games; Red/Blue/Yellow, Gold/Silver, FireRed/LeafGreen and HeartGold/SoulSilver.
In the anime
Ash goes to Saffron City in the anime in order to get the Marsh Badge to enter the Pokémon League, but was unable to beat Sabrina's Kadabra with Pikachu. This loss almost cost him and his friends their lives, due to Sabrina having a dark personality, but Sabrina's father saved them at the last second. Ash traveled to Lavender Town to get a Ghost Pokémon, which can beat Sabrina's psychic Pokémon, and later returned with a Haunter. Twice during their confrontation with Sabrina, the Haunter left because it didn't want to battle, but returned shortly after its second departure. However, instead of battling Sabrina's Pokémon, it chose to play around (as it had a plan to defeat her without fighting), causing the emotionless Psychic Gym Leader to burst into laughter, which also resulted in her befriending the Haunter and becoming a good-natured person. As a reward, Ash was presented with the Marsh Badge.
Ash and Brock later returned along with May and Max during the Advanced Generation series so May could compete in her first Kanto Pokémon Contest. Things started off rough as Harley tricked her again by lying about the deadline to register and using her Hoenn Contest pass to sign up: however, Lilian Meridian was able to let her compete after she saved the other coordinator's Pokémon from Team Rocket.
The contest soon took place with May, Harley and Jessie in disguise all advancing to the Battle Stage. Harley defeated "Jessabella" and in turn, he was defeated by May, winning her the Saffron City Contest and her first Kanto Ribbon.
Saffron City is also mentioned in Black and White as Iris takes the Magnet Train there to get to Johto after she and Cilan leave Ash.
Ash and Goh visited the Fighting Dojo in Saffron City with the goal of fighting the Dojo Master. Before Ash could challenge him, however, he was beaten by a Trainer named Bea. Ash and Bea then found out they were both participating in the World Coronation Series, so they decide to have a battle. Ash then found out that Bea was the Fighting-type Gym Leader of the Galar region. Ash eventually lost the battle, causing his overall ranking in the World Coronation Series to drop.
Super Smash Bros.
In Super Smash Bros., Saffron City appears as a stage. The layout features the rooftops of various buildings. The left portion of the stage has two platforms that move up and down.
When the battle begins, the door of the Silph Co. rooftop will open. The opened door will spawn a random Pokémon that can attack fighters, causing a set amount of damage. Charmander releases flames that damages fighters and will damage those who make contact with it. Porygon will damage those who make contact with it. Venusaur releases a barrage of leaves, damaging anyone who get caught by them plus contact with Venusaur also deals damage to fighters. Electrode will deal up to 30% damage after exploding. Chansey will throw an Egg onto the turf and is the only Pokémon that does not attack fighters, instead reducing their damage meter by 5% when they make contact with it. After a Pokémon appears from the opened door, the door will close, but will open again as time passes.
Some Pokémon, especially Butterfree, Pidgey, and Fearow can be seen flying in the background; on rare occasions, Moltres also flies in the background.
Saffron City would later appear in Super Smash Bros. Ultimate, where players have the option to turn the stage hazards off. With the hazards off, no Pokémon will appear from the rooftop door, and the platforms that normally move up and down will not move.
